My menu and a vegetarian recipe

My sweet 17 year old  daughter has been suffering with some medical issues and we have been directed by our doc to limit her meat intake and increase her veggies and fruits.  Sound familiar?? Yeah.  Something tells me we are destine to head in this direction as a family. In my quest for great vegetarian recipes I found a super recipe on pinterest that actually came from Eating Well.com .  We had it tonight for dinner and love love loved it! Check out the link and give it a shot!  Click here!  Tijuana Torta (picture above belongs to eatingwell.com PS we used nice chibatta rolls instead of the baguettes due to availability  Also you should know that we are still avoiding gluten for the most part but not 100%.  It is VERY difficult but we are still working with it the best we can and still believe it is the best choice for our family and especially for the lady of the house. When you see gluten on the menu know that I am most likely eating a sub instead of the wheat product

This is a menu is a little bit of a  new concept for our family.  Not sure if you noticed or not but I haven't been posting my menus. I have been very confused.  I apologize if this gets too personal but I will tell you a little what I have been going through. I had been introduced to 5 diets to follow. Due to health issues.  Not easy and contradicting to say the least. (the Dash diet, weight watchers, the paleo diet  gluten free and vegetarian.)  Argh! No way could I follow all 5. My bishop had spoken to our congregation about the atonement and how wasn't just for sin but for anything we need to change in our lives and He, my Savior can and will help me and provide the answers I need.  Ask and ye shall receive right? I decided to take it to the Lord for answers. I also began studying our Word of Wisdom every single morning along with my regular scripture study. I believe I was given the answer. The answer for me and my house is that we will eat meat sparingly 3 or 4 to 1 rati

Here's the menu....All of these have been altered and adapted for my new diet which is a combo of the dash diet, weight watchers and keeping an eye on the carbs.  All breakfasts include green smoothies (which are literally blended veggies and fruits no milk sugar etc) for the hubs and myself. Gotta get the 10-12 veggies and fruits somehow eh?? What my doc said and My Menu

I decided I needed to see the doctor.  I wasn't loosing the weight I was working at to loose and I was extremely tired.  Like Incredibly tired.  I found what I consider to be a great doc who listened really well to me.  He ran a bunch of blood work (15 vials worth) I thought for sure he was going to tell me my thyroid was off because I had all the symptoms.  Nope.  My thyroid is just fine.  I have hypoglycemia, dangerously low vitamin D levels and stage 2 hypertension.  I didn't even know there were stages.  See I am already learning things.  Now I am taking meds. 4 to be exact not including my supplements (like vitamin D) 9 pills in total everyday and I am having to learn a whole new way to eat.  A combination of the Dash diet, (low sodium and lots of fruits and veggies and whole grains etc) and weight watchers to get the weight down and I get keep my carbs in check as well.  I am allowed date night freedom to chose what I want and a treat once a week with the kids for FHE.  I
