Lindsay's Peruvian Chicken and Potatoes

I am so excited to share this recipe with you!  I have 4 daughters and one son. All of them are great cooks! This recipe was given to me by my sweet Lindsay and I would dare say cooking is one of her hobbies, talents and skills. She rocks in the kitchen! Lindsays husband served an LDS mission to Peru. Needless to say Lindsay wanted to bring Peruvian food to her home for her sweetheart. Enter Peruvian Chicken and Potatoes! Oh man this is GOOD! My youngest said it was some of the best chicken she has ever eaten! (and she is surrounded by and is also a great cook herself, so its quite the endorsement)  This dish is served with a green sauce called Aji Verde. It is beyond delicious but has cilantro. Some of us in our house dont care for cilantro so when I make it, I leave out the cilantro. It was still amazing but did lack the beautiful green color the sauce is known for, so... you do you Boo.  Hey there! So, this rice though. She is no looker, but she is so so good! Dont let the plainless of this comfort food dish fool you. If you need a feel good food, this is your huckleberry! Its is amazing! It might look like something the lunch lady would flop down on a tray but oh my. Its ricy goodness is worth trying! It is one of those casseroles that is even better the next day and it feeds a bunch too! Dont sleep on this one or let it pass you by. You must make it! ALSO It is less than 20 dollars for the entire recipe which feeds 12-14 people. Win Win in my book!

Delicious Wonton Soup.

Hello Friends! This soup is a super hero! Its healthy, and easy, quick, and so very easy! I really love wonton soup and so does my family. They are always excited when the "Whats for Dinner?" is answered by wonton soup! I highly suggest this restaurant copy cat as a must try!  NOTE*if you wont be eating this all in one sitting I highy suggest saving some of your wontons to add when you heat up your leftovers. Just add them to your bowl and pour the soup over and then heat.

Navajo Tacos

My family really loves Navajo Tacos! Some of the children have asked for this for their birthday dinners. Is a Navajo Taco an actual taco. No I don't think it is. A Navajo Taco is actually Indian fry bread topped with Chili and toppings typical of a taco like shredded lettuce, diced tomatoes, shredded cheese. sour cream. olives and guacamole.
