Ugly Rice! So Delish! Less than $20 and feeds 12-14 people per pan!


 Hey there! So, this rice though. She is no looker, but she is so so good! Dont let the plainless of this comfort food dish fool you. If you need a feel good food, this is your huckleberry! Its is amazing! It might look like something the lunch lady would flop down on a tray but oh my. Its ricy goodness is worth trying! It is one of those casseroles that is even better the next day and it feeds a bunch too! Dont sleep on this one or let it pass you by. You must make it! ALSO It is less than 20 dollars for the entire recipe which feeds 12-14 people. Win Win in my book!

Ugly Rice

This rice casserole doesnt exactly have a beautiful presentation but it is so tasty and pure comfort food that you will make it again and again!

Ingredients

  • 1 lb. lean ground turkey
  • 1 lb. sausage
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 large onion, finely diced
  • 2 cups finely diced celery
  • 2 14.5-oz cans chicken broth
  • 1 10.5-oz can cream of celery soup
  • 1 10.5-oz can cream of mushroom
  • 2 cups long-grain white rice

Instructions

  1. . Preheat oven to 350 degrees.
  2. Spray a 13x9 baking dish with cooking spray; set aside.
  3. Add ground beef, sausage, onion and celery and salt, pepper and garlic to a large skillet then brown and crumble over medium-high heat cooking until meat is cooked through and veggies are tender. Do not drain.
  4. 4. In a separate bowl, whisk together broth and soups until smooth. Pour soup mixture into skillet, stir then continue cooking until everything starts to bubble.
  5. 5. Gently stir in rice then pour everything into baking dish dish. Cover tightly with aluminum foil then bake at 350 degrees for 1 hour. If mixture cools before baking, allow up to 20 additional minutes of cooking time.
  6. 6. Remove casserole from oven and let rest, covered, for 15 minutes. Remove foil then fluff rice with a fork before serving.
  7. Enjoy!

Notes

Must use uncooked rice, and foil must be tight around your dish to allow for the rice to cook properly. You can use any flavor cream of soups your prefer.
