Sour Cream Enchilada Bake

This dish is inspired by my most beautiful and talented Mother In Law, who learned to make these in New Mexico while she lived there. She was kind enough to teach me how to make the actual enchiladas which will always be such a great memory of mine. I tried to make it the roll it up way and never seemed to be able to get the whole rolls out in tact so I improvised and came up with this bake idea. It tastes the same and is a little bit easier. It will never be equal to hers, but its pretty dang good if I do say so myself. My family really loves this casserole! I hope you try it! I think youll love it as much as we do! ENJOY!

Happy Thanksgiving!

As Thanksgiving approaches, let us come together in unity, celebrating the abundance of blessings that grace our lives. Whether we gather around a table laden with delicious food or simply take a moment of quiet reflection, let's embrace the spirit of thankfulness and let gratitude fill our hearts. From my family to yours, we wish you a happy Thanksgiving, filled with love, gratitude, and the warmth of cherished moments. May this holiday season be a reminder of the countless reasons we have to be thankful. Happy Thanksgiving!

Scotcharoos-A Classic Treat from the 60's

Y'all I fully believed this recipe was from the 80's, because my Mom and Grandma used to make it for our family.  It is not! I know! I was surprised too! The scotcharoo recipe was first found on the Kellogg's Rice Krispy Cereal box in 1960. Its technically a vintage recipe! If you haven't had a scotcharoo make this one soon! If you have had one, the time has come to walk down memory lane and make it again! It has chocolate, butterscotch and peanut butter all mixed in with the crunch of the rice krispy and the creamy chocolate butterscotch topping. Should I add that they are no bake and quick and easy? These sweeties are a delight!   ENJOY!
