Sour Cream Enchilada Bake

 This dish is inspired by my most beautiful and talented Mother In Law, who learned to make these in New Mexico while she lived there. She was kind enough to teach me how to make the actual enchiladas which will always be such a great memory of mine. I tried to make it the roll it up way and never seemed to be able to get the whole rolls out in tact so I improvised and came up with this bake idea. It tastes the same and is a little bit easier. It will never be equal to hers, but its pretty dang good if I do say so myself. My family really loves this casserole! I hope you try it! I think youll love it as much as we do! ENJOY!

We have some big things coming up including, but not limited to, sending our beautiful daughter to serve her Savior in Canada for 18 months. I couldn't be more proud of her desire to teach the gospel, and her continued efforts to do and be who she wants to be.
