Christmas Morning Breakfast

I love making this recipe for Christmas morning for 2 reasons.  First, I can throw it in the pot the night before and it is ready for us to eat the next morning without any effort. (Hey! At some point it has to be the moms holiday too. Right?) and Second, they get some much candy and sweets from Santa in their stocking I like to have something that is hearty and not sweet. 
What do you do about breakfast Christmas morning?
We let the kids see what Santa brought them (he doesn't wrap the few items he brings) and they can go through their stockings. At that point we stop and eat breakfast before opening any presents under the tree. It works for us. I'd love to hear what you do for breakfast Christmas morning!! Comment! Please.

Crock-pot Breakfast Casserole

Ingredients

1 32-ounce bag of frozen southern style hash brown potatoes (aka frozen shredded or tator tot

Potatoes)

2 lb. of bacon cut into pieces, fried & drained (or 2 pkg pre cooked)

1/2 c. diced onions

1 green pepper diced

3/4 lb. cheddar cheese diced

1 dozen eggs

1 c. milk

1/2 tsp. dry mustard

salt & pepper to taste

Directions

Layer the frozen potatoes, bacon, onions, green pepper and cheese in the crock pot in two or three layers. Finish up with cheese.
Beat the eggs, milk, mustard, salt & pepper together. Pour over whole mixture, Cook on low for 8 hours.

PERSONAL NOTES:

* I personally do not add the onion & green pepper as my kids would not eat it if I did.

* You can substitute any meat for the bacon.

* We like to roll this in warm flour tortillas with a little extra cheese and salsa on the top to make a breakfast burrito too.

  1. This looks like a great recipe. I always do a couple of holiday brunches over Christmas, one is a ladies only champagne holiday brunch. I saved your recipe I would love to use it. Do people just use a spoon or scoop out, or could I put it into a souffle pan and have taco wraps? How many people do you think it serves. Thanks a lot! I'm with your kids,I don't like peppers either!

  2. Carol, we scoop it out with a spoon. I bet it would work with a souffle pan but I have never tried it that way. As for how many it serves...I am not sure but it filled my 6qt crock about 2/3rd full. I hope that helps... (thanks for the comment! I love me some comments!!)

I had to blog about one of my most recent vinyl jobs! Have you ever worked with someone that you have never heard their voice, or seen their face, but feel like you really connect with them?
